Pineapple Upside-Down Cake

A moist vanilla ring cake infused with pineapple juice and baked pineapple rings.  Turned up-side down accented with marichino cherry halves and glazed with apricot jam.  

We recommend serving with whipped cream on the side as a delicious afternoon treat.
